Buttercream is the most versatile medium in custom cake work — and the widest in terms of labor. A simple finish and a full floral cascade are both 'buttercream cakes.' Quoting them the same way is a mistake.

The range of buttercream work

Buttercream is far from a single style. At one end: a smooth iced single-tier with a simple border and message — 20 minutes of decorating. At the other: a 3-tier cake with hand-piped petal flowers in five colors, a palette-knife textured mid-tier, and a fresh flower collar arranged on-site — 5 hours of decorating, not counting the flowers. Both are buttercream. The price difference should be enormous. It often isn't, because the baker is quoting by serving count alone.

Buttercream design complexity: what falls into each level

Simple

Smooth or semi-smooth finish, clean sides, basic piped border (shell, rope, or bead), optional sprinkles or simple toppers. No complex piping techniques, no hand-placed decorations. Time: 20–40 minutes decorating.
Design fee: $0–$20

Standard

Rosettes, basketweave, ruffles, ombre blends, simple piped flowers (drop flowers, stars), textured buttercream finishes (spatula or comb). A typical birthday or celebration cake in this style. Time: 45–90 minutes.
Design fee: $25–$50

Detailed

Palette knife painted florals or abstracts, hand-piped realistic flowers (open roses, chrysanthemums, dahlias), fresh flower arrangements, multi-technique design (e.g., textured tier + piped flowers + gold leaf accents), watercolor effect with edible paint. Time: 2–4 hours decorating.
Design fee: $60–$100

Premium

Full hand-piped floral suites covering multiple tiers, elaborate palette-knife landscape scenes, multiple texture and technique combinations, extensive fresh flower placement coordinated with a florist, buttercream installations. This is gallery-level work. Time: 4–8+ hours.
Design fee: $120–$200+

Fresh flowers on buttercream: the coordination cost

Many clients ask for fresh flowers on their buttercream cakes. This is a beautiful look — and a significant logistics addition. You need to either source the flowers yourself (cost + time), receive them from the client or florist (coordination), prep and clean them for food contact (time), and arrange them on the cake — sometimes at the venue on the day of the event (setup labor).

If you're sourcing and arranging the flowers, add the flower cost to your filling/add-on fee and charge a setup fee for on-site arrangement. If the client is providing their own florist flowers, you still deserve a placement fee for the time spent arranging them safely.

Textured finishes: the technique premium

Palette knife textures, raked combs, and scraped designs look effortless in photos. They're not. Getting a consistent, clean texture across a tall tier requires multiple passes, chilling between coats, and a practiced hand. A beautifully textured naked cake takes longer than a smooth-sided cake of the same size. If your texture work is a selling point, make sure it's in your design fee.

Tiers and buttercream

Multi-tier buttercream cakes present their own challenges. Buttercream is soft at room temperature, which means taller stacks can be less stable than fondant-covered cakes. Transport requires more care. If a design spans multiple tiers — a floral cascade or a painted scene — the complexity premium applies to the full design, not per tier. Use the Detailed or Premium design complexity level and the tier fee to capture both.
